The Best Chicken Soup I've Ever Made!

This season is a time for not only giving of gifts, but giving of colds and flues.

So take extra good care of your health and eat LOT'S of chicken soup.

There's not much science behind it, but somehow chicken soup boosts your immune system.

(Especially if it's homemade from scratch.)

Now, I know what your thinking....Homemade soup is difficult.

Well...yes, and no. It's not that difficult but it does take some time.

To start off...you'll need an "already cooked"... "whole roasted chicken." You can easily attain one already cooked from places like "Costco" or "Sam's Club" or even at your local super market.

Basically you'll want to strip the chicken of all it's meat and skin, and boil the bones and some of the skin in a pot of water ~ fill to the "near" top. Not too much otherwise the boil will spill over.

Boil for a good 2 hours on high heat and strain the broth from the bones. 2 hours is usaually a good enough time to get all the flavor out of chicken bones. But and extra hour couldn't hurt. You basically want to see the chicken fat separating from the skin and the bones turning white. That's the indication that the broth is made. You may need to add more water as the water is reduced a bit as the hour goes by.

With your nice clean broth, you simply add the following veggies diced.

1. Turnips
2. Carrots
3. Onions
4. Potatoes *raw with skin (try Yukon Gold)

Be sure to season and taste the broth after the veggies added some flavor. Some salt, pepper, oregano, and a "pinch" of dried chipotle grounds to add some spice.

If necessary, you should add one or two cubes of chicken bouillon. It has some cornstarch in it so it will thicken the broth nicely.

Finally, throw in some minced cooked chicken and left over skin skin and cook for another 10 minutes.

It's ready to eat!

*For extra flavor and nutrition, I like to throw in some fresh baby spinach just at the last minute of serving to guest.
